Chinese Cooked in a Restaurant

Due to dietary restrictions, most restaurants are off limits. I've never found cookbooks or cooking shows that interesting. But Sue & Gambo cook a lot of their food in an actual commercial kitchen.

Bad Light Sources(Sjogren's?)

 After many years, it appears that metal transfer reflects an unbearable light. Anything hard that contacts metal rubs off microscopic metal particles that oxidize after a day and reflect the "bad" light. Over the last year I've been using a microfiber cloth to slowly wipe down everything like hard plastic pet carriers, laundry buckets, tools, fasteners, bed frames and even metal show curtain rings. Problem is that you can't see it, so you easily lose track until the directional pressure headaches manifest.

Carbohydrate Ranting

 I tend to get ticked off by anyone touting the Mediterranean diet. I suspect there is more to it. I hear anecdotal evidence about carbs not affecting people in Italy, yet dietary wise nothing appears that different. They use durum wheat like we grow in America. I would guess that people visit during the summer and are hit with a lot of light.  The same with Africa where they slowly cook carbs with a lot of sunlight exposure over several hours. The traditional way to cook seems to be the 3 rock inefficient stove without a lid. The low carb crowd touts a study that shows only 25% of the people can cope with a high carb diet which I can't find. Sjogren's/B-Cell Stuff - Cleaning

 I've pretty much proved to myself that manufacturing dust cause issues. It appears they are good for a day or so, but once they oxidize things get painful like screws or plastic. So pretty much everything that isn't washed, like clothes or dishes,needs to dusted. Compressed air cans work fine, but a power duster like XPower duster off Ebay for $40 works great. My biggest source for bad reflected light appears to have been the kitchen pantry and the electric duster took care of that quite nicely.
